From an early age, Executive Chef Jared Combs felt an undeniable pull toward the kitchen. What began as a childhood fascination quickly became a lifelong calling shaped by discipline, creativity, and an unwavering passion for the craft. After years spent cooking throughout his youth, Jared pursued formal training at Le Cordon Bleu in Pasadena, California, graduating in 2004 with a degree in Culinary Arts and certification as a Le Cordon Bleu Chef.

Driven to broaden his global perspective, Chef Jared completed his externship at the Grand Hotel La Florida in Barcelona, Spain, where classical French technique intersected with bold international influence. Following graduation, he founded Mobius Catering and went on to open and lead numerous restaurants along the West Coast, from Los Angeles to Palo Alto. His career includes working alongside Michelin starred and James Beard Award winning chefs, as well as experience in first class in flight catering, crafting refined fine dining cuisine for major international airlines.

In 2018, Chef Jared brought his talent to Omaha, serving as Chef de Cuisine at the Marriott in the Capitol District, where he helped lead the property to number one Food and Beverage performance among all Marriott hotels nationwide. He later took the helm at M’s Pub, one of Omaha’s most iconic and beloved culinary institutions, where his creativity, depth of skill, and respect for craft fully came into focus.

Now, as Executive Chef of Monarch Prime at Hotel Deco, Chef Jared brings his signature vision to a refined traditional steakhouse experience. At Monarch, prime steaks anchor the menu, complemented by French culinary foundations and thoughtful Asian accents that add depth, balance, and intrigue. His cuisine is elegant yet approachable, rooted in classical technique while driven by modern sensibility and innovation.

Above all, Chef Jared’s work is fueled by purpose and heart, inspired by the love and light of his son, Jackson. Every dish is made from scratch, guided by precision, passion, and craftsmanship, with just a little extra love and elbow grease woven into every plate.
